D.O. MÁLAGA RAISINS


The D.O. Málaga raisins regulates raisins which have been dried under the sun. The grape varieties are Muscat from Alexandria or Muscat from Málaga and they are both grown and dried in La Axarquía and Manilva region.

The grapes are dried on devices known as paseros, which are erected on south-facing slopes. These devices’ inclination angle is at least of an 8%. They are equipped with an awning and a support to protect the grapes from the rain and the dew. Their size depends on the availability of the land, dimensions varying from 10m. to 12m. x 4m. to 5.5m., and with a capacity between 300 kg. and 400 kg. per pasero.

The grape bunches are spread out carefully on the pasero’s surface: smaller berries are positioned in the outer parts because they are the first to dry. They are kept on the paseros for approximately 10 days, depending on weather conditions.

Picado is the traditional name for the hand-made process of shucking the grapes. Although this is a task mainly carried out by women, all family members participate making use of specific scissors.

  • • The commercialized bunches would be the ones belonging to the Extra Category.
  • • The commercialized bunches would be the ones belonging to the Extra Category.
  • • Each bunch would be made up of kernels different in size. In order to guarantee its higher quality general appearance and its Muscat of Alexandria typology, extra quality kernels would be different up to a 30% at the most..

The Regulating Board can tolerate a difference in size up to a 5% depending on the particular incidents of the campaign.

AXARQUÍA



The region is characterised by its complex orography. It is surrounded by mountains in the north with steep slopes.

It has poor soils which are comprised of decomposing slate.

Influenced by a Mediterranean climate which is warm, mild and it is not wet.

The predominant variety is Muscat and the local (red or white) variety Romé.
COSTA OCCIDENTAL



Situated in the west, bordering Cádiz, it is characterised by hills of white limestone soil that stretch as far as the Mediterranean sea.

The region climate has both Atlantic and Mediterranean influence, with very few precipitations. The predominant variety is Muscat.
